Chateau Lestevenie

From Vine To Wine

icon-contact1

We have a very scientific approach to our winemaking techniques and are focused on mixing conventional and organic farming to fit our unique terroir. From bedrock to bottle we strive to understand the land and adapt to it.

Pruning, pulling shoots and attaching the vine during the winter. Attaching the vines, plowing, cutting grass, lifting the vines and cleaning between the vines during Spring.

In summer we get to enjoy more time with our guests, summer is also the season for canopy management (i.e. tip and top, cut grass, follow berry maturation, finish spraying protective agents, and ,at long last after copious preparation, harvest).

Fall is a peaceful season because the cellar gets quiet and the wine can finish malolactic fermentation. This is when the wine rests before being prepared for aging and bottling.
